I know they establish spreads and over under totals for individual matchups, but have they ever ranked teams?

Guys like Saban and Meyer and any head coach for that matter have inherent biases. I would be far more comfortable with Las Vegas, who makes a serious living ranking teams, and setting odds on games.
They know the game much more than people in Vegas.
With Vegas you have computers ranking teams and you'll get a 4 loss Ole Miss team in because their metrics look good
