The ref tells the visiting team to call one side of a coin. He flips it in the air and let's it hit the ground. When it lands, the side that is up, is the winner.
ND chose the side for 1st and 3rd qtr, right?

Already answered you. ND lost the toss and picked their side for 1st and 3rd qtr. You switch sides after 1st and 3rd quarters.

Same reason he opts for the ball every game. He wants to start off his high powered offense quickly.

If VT won the toss and deferred ... why did ND get the kick? That means VT picked the sides and smartly picked to go with the wind in the 4th quarter.

Seems like Kelly doesn't think things through in order to give his team the greatest advantages when they need it. Too many mental blunders during his 7 years here.
