Smoked Jalapeño Poppers
Next time you're smoking ribs or chicken or whatever in the backyard, you've got to try this! Take Jalapeño peppers and cut the in half lengthwise, cleaning out the seeds etc from the inside. Take a mixture of cream cheese, italian sausage, and a pinch of paprika, mix it up and stuff it in the peppers. Find some nice thick bacon and wrap it tightly around to keep the stuffing in, locking it down with a toothpick. Throw them in the smoker for 3 hours on tinfoil, trying to keep it at around 260F.
These things were incredible. There were dozens of them and they were GONE almost immediately at our cookout. Very very good. Pick a good belgian ale to wash it down with. Trust me..
