Picking up my first entry level offset smoker this weekend, and because I've been cheating using a temp controlled pellet cooker, I have a few questions:
1. How important is adding the heat diffuser plate?
2. Do I need to extend the exhaust pipe to cooking grate level?
3. Should I buy (what are the benefits) the charcoal/wood basket fit the firebox?
4. What's the best high heat gasket to buy to seal the doors and seams?
Any other suggested add-ons/modifications would be appreciated.
